How to Make Pimento Cheese

It's known as the "Caviar of the South"

Pimento cheese is one of those perfect foods that can either stand alone or be used to compliment other dishes (try it on a burger).

It’s Southern, yummy and very easy to make.

One of the best things about pimento cheese is that you can customize it and try something new each time. Almost any kind of cheese is fair game, so start with flavors you know you like, then experiment as you go.

*TIP: Use complimentary textures. For example, if you decide to use a soft cheese like brie, offset it with something harder like a mild cheddar.

Here’s a basic recipe to get you started:

1/2 cup shredded sharp cheddar
1/2 cup shredded mozzarella
1/2 tbsp garlic powder
1/2 tbsp white pepper
1/4 tbsp smoked paprika
1/2 cup mayonnaise
12 oz jar smoked red peppers, chopped

Mix cheeses, garlic powder and white pepper in a large bowl. Stir in mayonnaise and chopped red peppers. Refrigerate for at least an hour. Garnish with a sprinkle of smoked paprika. Serve with toasted French bread slices or crackers.
