It’s All Small Batch at Pilot Brewing

This brewmaster combined her love of small batch brewing and her husband's job into a new venture.

For Rachael Hudson, the word ‘pilot’ has a dual meaning. 

On one hand, it highlights one of her favorite ways of brewing beer, via a pilot system. It’s a small-batch process that traditionally larger breweries utilize to test brews. On the other hand, her husband is an actual pilot. So when it came time to talk concept for her passion project of opening a micro-brewery, it was a no-brainer.

Now open in Plaza Midwood, Pilot Brewing’s goal is to never serve the same beer twice. Hudson says she doesn’t want to be the brewery that only ever has the same five option on tap. Instead, they change up the offering every time a tap kicks, bringing a new variety to the area.
